I’ve been rounding up some Paleo winter recipes, having so much fun looking at beautiful food photography.

We naturally crave heavier foods in the winter but the great thing about eating Paleo is that you can eat heavier foods, as long as they are “clean” and you’re not going to feel heavy (and lethargic and sick).

It’s pretty crazy how much energy I have eating this way.

It’s the opposite of what I had imagined.

I also always thought of Paleo as being meat, meat, meat and I am sure there are some people that do eat that way.

Paleo, however, is supposed to be HEAVY vegetables, NO sugar, GOOD fat, NO grains, NO legumes, NO dairy (although some “Primal” people have limited dairy) and SOME fruit (ideally low-glycemic…apples, pears, berries).

You have to eat the vegetables because you need those nutrients but you also need the fiber to get things moving. Meat has no fiber. It’s recommended that we get 32 grams of fiber a day.

The hardest thing about being a vegetarian for me was smelling bacon and saying “No, thank you.”

Oh, man.

We went to a party the other night and I asked the waiter if the Bacon Wrapped Quail appetizers were gluten free and he told me “Yes!”

I was thinking, of course they are…quail and bacon, where would the gluten be?

So I ate one…LOVED it….and then he comes back over to tell me:

“I’m so sorry! I feel terrible! The chef just told me he uses a wheat-based flour on the grill to keep the quail from sticking!”

Good grief. Are you serious?

Who does that?

Who puts flour on the grill?

Well, maybe chefs do that all the time, right? So we always need to ASK and well, I *did* ask but what are you going to do?
That’s why I hardly ever eat at parties.

So I loaded up on probiotics, L-glutamine and every other supplement I could think of and prepared for the worst but I was okay–it was only one piece but if you have celiac, you don’t always feel the damage.
